Blueberry Loaf Bread

Made blueberry cake today in a loaf pan using two different recipes hoping to come up with the right concoction. It took me too long to decide what to make as I had the day off, and resorted to this when I found untouched blueberries in the fridge. Please give me more suggestions for the future, and remember to subscribe if you want email updates for whenever I post! I wish I had a lemon glaze on top but I got tired and resorted to powdered sugar. Here it goes. 


Ingredients: 
1. 2 cups flour
2. 2 tsp baking powder
3. 1 cup sugar (I used 2/3 cups in an effort to be healthy, haha)
4. 3 handfuls of blueberries (1 cup)
5. 1 tbsp lemon juice
6. 1/3 cup yogurt
7. 1/3 cup milk 
8. 1 tsp vanilla
9. 2 eggs
10. 1/2 cup softened butter

INSTRUCTIONS
1. Preheat oven to 350. Butter and flour loaf pan. 
2. Mix flour and baking powder, then add in eggs one by one and sugar. 
3. add milk, yogurt, and butter, beat to batter consistency. 
4. Add in lemon juice and vanilla.
5. pour blueberries in and fold into batter with spatula, then pour batter into loaf pan and set to bake for 40 minutes.
6. check for completion by putting a toothpick into the center of the loaf and seeing if it comes out clean. cool at least 30 mins before serving. garnish with sifted powdered sugar. 
OR 
7. mix together 3/4 cup confectioners sugar and 1-2 tbsp lemon juice. whisk well to desired consistency and pour on top of loaf.
